Boston Cream Poke Cake Mix Recipe
Ingredients:
- 1 box yellow or butter cake mix
- Two 3-ounce packages of instant vanilla pudding
- 4 cups milk
Instructions:
- Prepare the Cake:
- Mix the cake according to the package instructions and bake in a 9 x 13 inch baking dish. Follow the specified baking time and temperature.
- Poke the Cake:
- While the cake is still warm, use the back of a wooden spoon to poke holes into the cake. Space the holes about 1 inch apart across the entire surface.
- Prepare the Pudding:
- In a medium bowl, whisk together the two boxes of instant vanilla pudding mix with 4 cups of milk until smooth.
- Pour the Pudding: Pour the prepared pudding evenly over the warm cake, ensuring it seeps into the holes. Gently tap the baking dish on the counter to help the pudding settle into the holes.
- If the pudding thickens before pouring, add 1-4 tablespoons of milk and stir to thin it out.
- Chill the Cake:
- Place the cake with the pudding into the refrigerator for at least 2 hours to allow the pudding to set.
Chocolate Ganache
Ingredients:
- 1/4 cup heavy cream
- 3 tablespoons butter
- 4 ounces semi-sweet chocolate (Baker’s preferred)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1-3 tablespoons hot water (optional, for thinning)
Instructions:
- Heat the Cream:
- Scald the heavy cream and butter in the microwave for about 2 minutes, but do not let it boil.
- Melt the Chocolate:
- Add the 4 ounces of semi-sweet chocolate to the scalded cream and butter mixture. Stir until the chocolate is fully melted and smooth.
- Whisk the Icing:
- Add 1 cup of powdered sugar and 1 teaspoon vanilla extract. Whisk until the mixture becomes a smooth, pourable ganache.
- If the ganache is too thick, add 1 tablespoon of hot water at a time until it reaches a pourable consistency.
- Pour the Ganache:
- Pour the warm chocolate ganache evenly over the chilled cake. Spread it gently with a spatula to cover the surface.
- Refrigerate:
- Return the cake to the refrigerator and chill until the ganache is firm, approximately 1 hour.
Quick Tip:
If you’re short on time, you can use a can of chocolate frosting instead of making ganache. Simply heat the frosting in the microwave until it’s pourable and spread it over the cake. Enjoy your Boston Cream Poke Cake!
