Ingredients

For the Brownie Layer

  • 1 box (18.3 ounces) fudge brownie mix
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3 tablespoons water

For the Peanut Butter Cheesecake Layer

  • 16 ounces cream cheese, softened
  • 3/4 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

For the Topping

  • 1 1/2 cups chopped peanut butter cups

Instructions

Step 1: Prepare the Oven

Preheat the oven to 325°F (165°C). Lightly grease an 8-inch square baking pan with cooking spray or line it with parchment paper.

Step 2: Make the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese, peanut butter, granulated sugar, egg, and vanilla extract until smooth and creamy. Scrape down the sides of the bowl as needed to ensure everything is evenly combined.

Step 3: Prepare the Brownie Batter

In a separate bowl, combine the brownie mix, vegetable oil, two eggs, and water. Stir until the ingredients are blended and the batter is smooth.

Step 4: Assemble the Layers

Spread approximately half of the brownie batter evenly across the bottom of the prepared pan.

Spoon the peanut butter cheesecake mixture over the brownie layer and gently spread it into an even layer. Carefully spoon the remaining brownie batter over the cheesecake filling.

Step 5: Add the Peanut Butter Cups

Sprinkle the chopped peanut butter cups evenly over the top of the brownie batter. Press them gently into the surface so they stay in place during baking.

Step 6: Bake the Brownies

Bake for approximately 45–50 minutes, or until the center is just set. Avoid overbaking, as the brownies should remain moist and fudgy.

Allow the brownies to cool on a wire rack for about 1 hour.

Step 7: Chill and Slice

Refrigerate the brownies for at least 4 hours so the cheesecake layer can firm up properly.

Once chilled, cut into squares with a sharp knife and serve.

Tips for the Best Peanut Butter Cheesecake Brownies

  • Use softened cream cheese to create a smooth, lump-free cheesecake filling.
  • Avoid overmixing the cheesecake layer, as excessive mixing can incorporate too much air.
  • Do not overbake. The center should be set without becoming dry.
  • Chill thoroughly before slicing for neat, clean squares.
  • For extra flavor, drizzle melted chocolate or melted peanut butter over the brownies before serving.

Storage

Store the brownies in an airtight container in the refrigerator for up to 4–5 days because of the cream cheese filling.

For longer storage, freeze individual portions in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before serving.
