Ingredients

  • 6 cups sugar, divided
  • 2 cups heavy cream
  • ½ cup unsalted butter
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped walnuts or pecans

Preparation

1. Prepare the Baking Dish

  • Grease a 9×13-inch baking dish and set it aside.

2. Melt the First Portion of Sugar

  • In a small, heavy-bottomed saucepan, place 2 cups of sugar and cook over low heat, stirring frequently.
  • Continue cooking until the sugar is completely melted and golden, about 20 minutes.

3. Simmer Remaining Sugar and Cream

  • In a large saucepan or Dutch oven, combine the remaining 4 cups of sugar and 2 cups of heavy cream.
  • Simmer over low heat while waiting for the sugar in the small saucepan to melt.

4. Combine Mixtures

  • Slowly and carefully pour the melted sugar from the small saucepan into the large saucepan, stirring continuously to prevent clumps.

5. Cook to Softball Stage

  • Increase the heat to medium and cook the mixture until it reaches 244°F (softball stage). Use a candy thermometer for accuracy.

6. Add Final Ingredients

  • Remove the saucepan from the heat and stir in the baking soda until fully incorporated.
  • Add the butter and vanilla extract, stirring until the butter melts and the mixture is smooth.

7. Rest and Add Nuts

  • Let the mixture rest for 20 minutes.
  • Stir in the chopped walnuts or pecans until well mixed and the sheen from the mixture fades.
