I thought I’d tried just about every trick for getting crispy roast chicken skin.
Pat it dry.
Use plenty of salt.
Start with a hot oven.
Leave the chicken uncovered in the refrigerator.
Even air-drying the chicken overnight.
But then I came across a technique that sounded almost ridiculous:
Rub the chicken with baking powder before roasting it.
Not baking soda.

A large amount of baking powder can leave a bitter or chemical aftertaste.
The coating should be light.
You’re seasoning the chicken, not covering it in a thick layer of powder.
Baking Powder vs. Baking Soda
This deserves repeating because it’s probably the easiest mistake to make.
Baking powder is not the same as baking soda.
If a recipe calls for baking powder, don’t casually substitute baking soda.
Baking soda is much more alkaline.
Using too much can negatively affect both flavor and texture.
If you’re trying this technique, use a tested recipe or carefully measured amount of baking powder rather than guessing with a large handful.
What About Salt?
Salt plays an important role too.
Salting the chicken before roasting can season the meat and also help draw moisture toward the surface.

The exact amount of salt matters, though.
Too little and the chicken can taste bland.

Do You Have to Wait 24 Hours?
No.
Twenty-four hours was the length of my experiment.
Even a shorter uncovered refrigerator rest can help dry the skin.
But the longer rest gives the refrigerator more time to remove surface moisture and allows the seasoning to sit on the chicken.
If you have the time, overnight is convenient because you can season the chicken the day before and roast it the next day.
Just remember that the chicken should remain properly refrigerated during the entire process.
What I Would Change Next Time
After seeing the result, I wouldn’t dramatically change the technique.
I’d keep the coating thin.
I’d make sure the chicken was thoroughly dry before seasoning.
I’d place it on a rack so air could circulate around the bird rather than letting it sit directly in liquid.
And I’d leave it uncovered in the refrigerator overnight.
The biggest improvement would be making sure the chicken is cooked according to temperature rather than simply relying on a fixed number of minutes.
A whole chicken varies considerably in size, and ovens aren’t identical.
Don’t Forget the Food-Safety Basics
This experiment involves raw poultry, so normal food-safety precautions still apply.
Keep the chicken refrigerated at 40°F (4°C) or below.
Keep raw poultry away from foods that will be eaten without cooking.
Wash your hands after handling it.
Clean surfaces and utensils that come into contact with raw chicken.
And most importantly, use a food thermometer to verify that the chicken has reached a safe internal temperature.
Don’t judge doneness solely by the color of the skin or the juices.
Crispy skin doesn’t necessarily mean the meat is fully cooked.
The 24-Hour Result
After 24 hours in the refrigerator, the chicken skin was noticeably drier.
After roasting, it became beautifully browned and crisp.
The meat stayed moist because I cooked the chicken appropriately rather than relying on the baking powder to do something it can’t do.
And the flavor was exactly what I hoped for.
The experiment taught me that the secret to great roast chicken skin isn’t necessarily one magical ingredient.
It’s controlling moisture.
Dry the skin.

If you’re cooking dinner at 6 p.m., you can’t decide at 5:30 p.m. that you suddenly want 24-hour air-dried chicken skin.
But if you plan ahead, the work is minimal.
Season the chicken.
Put it on a rack.
Refrigerate it uncovered.
Go about your day.
The next day, roast it.
That’s a pretty good return on a few minutes of preparation.
