Ingredients
For the Soup Base:
- Ground beef or Italian sausage: 1 pound (450 grams)
- Onion: 1 small, chopped
- Garlic: 3 cloves, minced
- Crushed tomatoes: 1 can (28 ounces)
- Diced tomatoes: 1 can (14.5 ounces)
- Chicken or beef broth: 4 cups (1 liter)
- Water: 1 cup (optional, for thinner soup)
- Italian seasoning: 2 teaspoons
- Dried basil: 1 teaspoon
- Dried oregano: 1 teaspoon
- Red pepper flakes: ½ teaspoon (optional, for heat)
- Salt and pepper: To taste
For the Noodles:
- Lasagna noodles: 8, broken into small pieces
For the Cheese Topping:
- Ricotta cheese: 1 cup
- Mozzarella cheese: 1 cup, grated
- Parmesan cheese: ½ cup, shredded
- Fresh parsley or basil: 1 tablespoon, chopped (optional, for garnish)
Instructions
1. Make the Soup Base
- Heat a large pot or Dutch oven over medium heat.
- Add the ground beef or Italian sausage, breaking it into small pieces as it cooks. Cook until browned, then drain excess grease.
- Stir in the chopped onion and garlic. Cook for 2–3 minutes until softened and fragrant.
2. Build the Flavor
- Add crushed tomatoes, diced tomatoes, broth, Italian seasoning, basil, oregano, red pepper flakes (if using), salt, and pepper to the pot.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 15–20 minutes, allowing the flavors to meld together.
3. Cook the Noodles
- Break lasagna noodles into small pieces and stir them into the gently simmering soup.
- Cook for 8–10 minutes, stirring occasionally, until the noodles are tender.
4. Prepare the Cheese Topping
- In a small bowl, mix ricotta cheese, mozzarella cheese, and Parmesan cheese.
5. Serve the Soup
- Ladle the hot soup into bowls.
- Top each bowl with a generous spoonful of the cheese mixture.
- Garnish with fresh parsley or basil, if desired.
Tips for Success
- Make it Creamy: Stir in ½ cup of heavy cream or a splash of milk just before serving for a richer soup.
- Thinner Soup: Add extra broth or water if the soup is too thick for your liking.
- Freezing: To freeze, cook the noodles separately and add them when reheating to prevent them from becoming mushy.
Storage & Reheating
- Refrigerate: Store leftovers in an airtight container for up to 3 days. Reheat on the stovetop or microwave until warmed through.
- Freeze: Freeze in portions without the noodles. Add cooked noodles when reheating for best texture.
