🥬 150 g (5.3 oz) fresh or frozen spinach (thawed & well-drained)
🧀 100 g (3.5 oz) feta cheese (crumbled)
🍞 250 g (2 cups) flour (all-purpose or spelt)
🥚 3 eggs
🥛 100 ml (⅓ cup + 1 tbsp) milk or yogurt
🛢️ 50 ml (3 tbsp) olive oil
🧅 1 small onion (finely diced)
🧄 1 garlic clove (minced)
🌿 1 tsp oregano or thyme (dried)
🧂 1 tsp salt
🌶️ ½ tsp black pepper
🥄 1 packet baking powder (about 10 g / 2 tsp)
🌱 Sesame seeds or pumpkin seeds for topping (optional)

1️⃣ Preheat the oven to 180°C (356°F) top/bottom heat or 160°C (320°F) fan-forced.
2️⃣ Prepare the spinach: If using frozen spinach, make sure to drain it well. If using fresh spinach, sauté it briefly with onion and garlic in a pan until wilted.
3️⃣ Mix dry ingredients: In a bowl, combine flour, baking powder, salt, pepper, and dried herbs.
4️⃣ Add wet ingredients: Stir in eggs, milk (or yogurt), and olive oil until a smooth batter forms.
5️⃣ Fold in spinach & feta: Gently mix in the cooled spinach and crumbled feta.
6️⃣ Transfer to the pan: Grease a loaf pan or line it with parchment paper, then pour in the batter. Sprinkle with sesame or pumpkin seeds if desired.
