Pumpkin Cream Cheese Roll
Ingredients:
For the Cake:
- 3 eggs
- 1 cup sugar
- 2/3 cup canned pumpkin
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup flour
For the Filling:
- 1 (8-ounce) package cream cheese, softened
- 4 tablespoons butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Directions:
- Prepare the Cake Batter:
- In a large bowl, beat the eggs and sugar together until well combined.
- Add in the canned pumpkin, baking soda, cinnamon, nutmeg, and flour. Continue mixing until the batter is smooth.
- Prep the Pan:
- Grease a 10″x15″ jelly roll pan.
- Line the pan with waxed paper, then grease and lightly flour the waxed paper.
- Bake the Cake:
- Pour the batter into the prepared pan and spread it evenly.
- Bake at 350°F for 15 minutes. Watch the cake carefully to avoid burning the edges, as it cooks quickly.
- Turn the Cake onto a Towel:
- While the cake is baking, heavily sprinkle a clean kitchen towel with powdered sugar using a sieve or sifter.
- Once the cake is done, immediately turn the hot cake onto the prepared towel. Carefully remove the waxed paper.
- Trim off any burnt or crusty edges.
- Sprinkle more powdered sugar over the hot cake and quickly roll it up with the towel inside. Let the rolled cake cool completely (about 30 minutes).
- Prepare the Cream Cheese Filling:
- While the cake is cooling, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Assemble the Roll:
- Once the cake has cooled, gently unroll it and spread the cream cheese filling evenly over the surface.
- Re-roll the cake with the filling on the inside.
- Refrigerate or Freeze:
- Wrap the pumpkin roll in waxed paper and then foil.
- Refrigerate or freeze the roll until ready to serve.
- Serve:
- For best results, slice the roll while it’s still slightly frozen into 1/3-inch thick slices.
- Sprinkle with powdered sugar before serving.
Note: The cake slices cleanest when slightly frozen, ensuring neat and perfect servings every time!
