Pineapple Fluff 🍍
This Pineapple Fluff dessert brings a burst of tropical flavors and is perfect for any gathering. It’s creamy, sweet, and packed with pineapple, coconut, marshmallows, and pecans for a delightful treat!
Ingredients
- 2 (3.4 ounce) boxes instant vanilla pudding mix
- 2 (20 ounce) cans crushed pineapple in juice (do NOT drain the juice)
- 1 (8 ounce) tub Cool Whip (or whipped topping of choice)
- 1 (10 ounce) bag mini marshmallows
- 1 ½ cups shredded coconut
- 1 cup chopped pecans (plus more for topping)
Directions
Step 1: Mix Pudding and Pineapple
- In a large mixing bowl, combine the instant vanilla pudding mix with the crushed pineapple and its juice.
- Stir until no streaks of pudding mix remain, creating a smooth pineapple mixture.
Step 2: Fold in Cool Whip
- Gently fold in the Cool Whip until it’s fully incorporated. Take care to fold gently to keep the Cool Whip airy and fluffy.
Step 3: Add Remaining Ingredients
- Add the mini marshmallows, shredded coconut, and chopped pecans to the mixture.
- Fold all ingredients together until evenly combined.
Step 4: Chill
- Cover the bowl and refrigerate for 2-4 hours to allow the flavors to meld and for the fluff to set to the perfect consistency.
Step 5: Garnish and Serve
- Just before serving, garnish with extra crushed pineapple, chopped pecans, mini marshmallows, and shredded coconut for added texture and flavor.
