  • 1 medium green bell pepper (diced)
  • 1 medium onion (white or yellow, diced)
  • 227 grams mushrooms (sliced)
  • 1/2 teaspoon kosher salt (for seasoning the vegetables)
  • 1/2 teaspoon black pepper
  • 454 grams ground beef (sirloin, crumbled)
  • 794 grams red pasta sauce (about 2 standard jars)
  • 60 ml sour cream (about 1/4 cup)
  • 120 grams cream cheese (softened, about 4 oz)
  • 120 grams cottage cheese (about 1/2 cup)
  • 500-750 ml shredded cheese (Mozzarella, Italian blend, or Cheddar, divided)

Preparation:

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the rotini (or your preferred pasta) and cook according to the package instructions until al dente.
  2. Drain the pasta and set aside.

Step 2: Sauté the Vegetables

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the minced garlic, diced bell pepper, onion, and sliced mushrooms. Sauté for 3-4 minutes until the vegetables are tender.
