🛒 Ingredients (Serves 2–3):
🌱 For the Lentil Balls:
• 🌾 150 g red lentils
• 🧅 1 small onion, diced
• 🧄 2 garlic cloves, minced
• 🌿 1 tsp ground cumin
• 🌶️ ½ tsp paprika (sweet or smoked)
• 🥄 3 tbsp rolled oats or breadcrumbs
• 🌱 1 tsp chopped parsley or cilantro
• 🧂 Salt & pepper to taste
• 🛢️ 1 tbsp oil for frying
🥥 For the Coconut Curry Sauce:
• 🥥 200 ml coconut milk
• 🍅 2 tbsp tomato paste
• 🧄 1 garlic clove, minced
• 🧅 1 small onion, diced
• 🌶️ 1 tsp curry powder
• 🌿 ½ tsp turmeric
• 🍋 Juice of half a lime
• 🥣 200 ml vegetable broth
• 🛢️ 1 tbsp oil for frying
👩🍳 Instructions:
1️⃣ Cook the lentils:
• Cook the red lentils according to the package instructions, drain well, and let them cool slightly.
2️⃣ Form the lentil balls:
• Mix the cooked lentils with onion, garlic, spices, oats, and herbs.
• Knead the mixture well and shape it into small balls.
3️⃣ Fry the balls:
• Heat oil in a pan and fry the lentil balls until golden brown on all sides.
• Remove from the pan and set aside.
4️⃣ Prepare the coconut curry sauce:
• In the same pan, sauté the onion and garlic until soft.
• Stir in tomato paste, curry powder, and turmeric, and briefly roast to release the flavors.
5️⃣ Add the liquids:
• Pour in coconut milk, vegetable broth, and lime juice, and let the sauce simmer for about 5 minutes.
6️⃣ Combine with the lentil balls:
• Carefully add the lentil balls to the sauce and let everything simmer for another 5 minutes.
7️⃣ Serve & enjoy!
• Garnish with fresh herbs and serve with rice or naan bread.
