- 2 celery stalks, diced
- 1/2 cup heavy cream (optional for a creamier soup)
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Directions
1. Sauté the Kielbasa
- Heat a large soup pot or Dutch oven over medium heat.
- Add the sliced kielbasa and sauté for 3-4 minutes until golden brown on both sides. Remove the kielbasa and set it aside.
2. Cook the Aromatics and Veggies

- Add the minced garlic and smoked paprika, cooking for 1 minute until fragrant.
3. Simmer the Soup
- Add the diced potatoes and chicken broth to the pot.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the potatoes are fork-tender.
4. Finish the Soup
- For a creamy version, stir in the heavy cream at this stage.
- Return the cooked kielbasa to the pot and mix well.
- Season with salt and pepper to taste.
5. Serve
- Ladle the soup into bowls and garnish with fresh parsley.
- Serve with warm crusty bread or biscuits for dipping.

- Extra Veggies: Add spinach or kale in the last 5 minutes of cooking for extra greens.
- Thicker Soup: Use an immersion blender to partially blend the soup for a thicker consistency.
