Mozzarella-Stuffed Biscuit Bombs
These cheesy, buttery biscuit bombs are the perfect snack or appetizer. They feature a delicious surprise of melted mozzarella cheese in the center, with a golden, garlicky crust.
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ teaspoon baking soda
- ½ cup unsalted butter, cold and cut into small pieces
- 1 cup buttermilk
- 12 small pieces of mozzarella cheese
- ¼ cup melted butter
- 1 teaspoon garlic powder
- 1 tablespoon fresh parsley, chopped
Instructions:
- Preheat the Oven:
- Heat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
- Cut in the Butter:
- Add the cold, cut butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Add the Buttermilk:
- Pour in the buttermilk and stir until the dough forms.
- Prepare the Dough:
- Transfer the dough onto a floured surface and gently knead it a few times.
- Flatten the dough into a rectangle about ½ inch thick and cut it into 12 equal squares.
- Stuff with Cheese:
- Place a piece of mozzarella cheese in the center of each square. Fold the dough around the cheese, pinching the edges together to seal the dough completely.
- Bake:
- Arrange the biscuit bombs seam-side down on the prepared baking sheet.
- Brush the tops with melted butter and sprinkle garlic powder on top.
- Bake for 15-18 minutes, or until the biscuit bombs are golden brown and the cheese inside is melted and gooey.
- Finish with Butter and Herbs:
- Once baked, brush the biscuits with the remaining melted butter and sprinkle fresh parsley over the top.
- Serve:
- Serve warm and enjoy the cheesy, garlicky goodness!
Variations and Tips:
- Cheese Variations: Try cheddar or pepper jack cheese for a different flavor.
- Add-ins: Add cooked bacon or a teaspoon of your favorite jam for a sweet and savory twist.
- Spice it up: Mix red pepper flakes with the garlic powder for a little kick.
- Buttermilk Substitute: If you don’t have buttermilk, mix 1 tablespoon of lemon juice with 1 cup of milk and let it sit for 5 minutes before using.
Enjoy these delicious biscuit bombs!
