This vibrant, flavorful salsa is packed with fresh ingredients and a perfect balance of spice, zest, and sweetness. It’s quick to make and pairs beautifully with tortilla chips, nachos, tacos, or anything you love. You’ll never go back to store-bought after trying this!

Ingredients

  • 1 can (28 ounces) whole tomatoes with juice
  • 2 cans (10 ounces each) Rotel (diced tomatoes and green chilies)
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño, quartered and thinly sliced (adjust to spice preference)
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup fresh cilantro (more if desired)
  • Juice of 1/2 lime

Directions

1. Combine the Ingredients

In a blender or food processor, add the following:

  • Whole tomatoes (with juice)
  • Rotel (diced tomatoes and green chilies)
  • Chopped onion
  • Minced garlic
  • Sliced jalapeño
  • Sugar, salt, and cumin
  • Fresh cilantro
  • Lime juice

2. Blend

  • Pulse the mixture until you reach your desired consistency (10–15 pulses for a slightly chunky salsa).
  • Taste using a tortilla chip and adjust the seasonings if necessary (e.g., add more salt, lime juice, or cilantro).

3. Chill

  • Transfer the salsa to a bowl or container and refrigerate for at least 1 hour to allow the flavors to meld together.

4. Serve

  • Enjoy with tortilla chips, over cheese nachos, or as a topping for your favorite Mexican dishes.

Tips for Perfect Salsa

  • Adjust Spice Level: Remove the jalapeño seeds for a milder salsa, or add more jalapeño for extra heat.
  • Fresh Alternative: Substitute canned tomatoes with fresh, ripe tomatoes for a garden-fresh version.
  • Storage: Keep salsa in an airtight container in the fridge for up to 5 days.
