This homemade Bärlauchpesto is a true delight—nutty, garlicky, and irresistibly creamy! Perfect for pasta, bruschetta, grilled meats, or as a dip.
🛒 Ingredients:
• 60 g (2 oz) fresh wild garlic (Bärlauch)
• 70 g (2.5 oz) walnuts, chopped
• 70 g (2.5 oz) freshly grated Parmesan
• 150 ml (⅔ cup) rapeseed oil (or olive oil)
• Salt & pepper, to taste

1️⃣ Prep the Ingredients:
• Wash the wild garlic thoroughly and pat it dry.
• Remove the stems and chop the leaves into smaller pieces.
• Toast the walnuts in a dry pan over medium heat for a few minutes until fragrant.
2️⃣ Blend the Pesto:
• Add wild garlic, walnuts, Parmesan, and oil to a tall mixing cup.
• Use an immersion blender (or a food processor) to blend until smooth.
• Season with salt and pepper to taste.
3️⃣ Store & Enjoy:
• Transfer the pesto to small jars and cover the surface with a thin layer of oil to preserve freshness.
