  5. 1 can (14.5 oz) diced tomatoes, drained
  6. 4 cups chicken broth
  7. 1 cup heavy cream
  8. 1 cup small pasta (ditalini or elbow)
  9. 1 cup shredded Parmesan cheese
  10. 1/2 tsp dried basil
  11. 1/2 tsp dried oregano
  12. Salt and pepper, to taste
  13. Fresh parsley, chopped (for garnish)

Instructions

1. Cook the Sausage

  • Heat olive oil in a large pot over medium heat.
  • Add the Italian sausage, breaking it into crumbles as it cooks. Cook until browned, then remove from the pot and set aside.

2. Sauté the Aromatics

  • In the same pot, add the diced onion and minced garlic.
  • Sauté for 3–4 minutes, or until the onion becomes translucent and fragrant.

3. Simmer the Broth

  • Stir in the drained diced tomatoes, chicken broth, dried basil, and dried oregano.
  • Bring the mixture to a boil.

4. Cook the Pasta

  • Add the small pasta to the boiling broth mixture.
  • Cook for 8–10 minutes, or until the pasta is al dente.

5. Add Cream and Cheese

  • Reduce the heat to medium-low.
  • Stir in the heavy cream and shredded Parmesan cheese. Allow the cheese to melt, creating a creamy soup base.

6. Combine and Season

  • Return the cooked sausage to the pot, stirring to combine.
  • Season with salt and pepper to taste.

7. Serve

  • Ladle the soup into bowls. Garnish with fresh parsley and serve hot.
