Creamy Crock Pot Cheeseburger Pasta

This creamy, cheesy, and hearty dish is pure comfort food. Velveeta, cream cheese, and Rotel create the perfect sauce for this satisfying pasta dish!

Ingredients

  • 1 large block Velveeta cheese
  • 1 (8 oz) block cream cheese
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes with chilies
  • 2.25 lbs ground beef
  • 1 box bowtie noodles
  • Salt and pepper to taste
  • 1 cup reserved pasta water (optional, to thin sauce)

Instructions

1. Prepare the Sauce:
Set your crock pot to high. Add the Velveeta cheese, cream cheese, cream of chicken soup, and Rotel tomatoes. Cover and allow the ingredients to melt together while preparing the beef.

2. Cook the Ground Beef:
In a large skillet over medium heat, brown the ground beef. Season with salt and pepper to taste. Drain any excess grease and add the beef to the crock pot. Stir to combine.

3. Cook the Sauce:
Cover and let the mixture cook on high for about 1½ hours, stirring occasionally, until smooth and creamy.

4. Cook the Pasta:
Bring a large pot of salted water to a boil and cook the bowtie noodles according to package directions. Reserve about 1 cup of pasta water, then drain the noodles.

5. Combine and Serve:
Add the cooked noodles to the crock pot and stir until well coated in the sauce. If the sauce seems too thick, stir in a bit of the reserved pasta water until it reaches your desired consistency.

6. Enjoy:
Serve warm and enjoy the ultimate comfort food!

Tips:

  • Make it Spicy: Add a dash of cayenne or some diced jalapeños for extra heat.
  • Customize: Swap ground beef for ground turkey, chicken, or sausage for a fun twist.
  • Leftovers: Store in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk or water to loosen the sauce.
