Ingredients:
- 115 grams (1 stick or 1/2 cup) unsalted butter, room temperature
- 90 grams (1/2 cup) brown sugar
- 50 grams (1/4 cup) caster sugar or granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 140 grams (1 cup) plain or all-purpose flour
- 1/2 teaspoon baking soda
- 40 grams (1/2 cup) cocoa powder
- Pinch of salt (optional)
- 1 tablespoon full-fat or whole milk
- 100 grams (2/3 cup) dark or milk chocolate, roughly chopped, plus extra for decorating
Instructions:
Step 1: Prepare Baking Trays
- Line two baking trays with baking paper or parchment paper.
Step 2: Mix Butter and Sugars
- In a large mixing bowl, add butter and both sugars (brown and caster/granulated).
- Beat using an electric mixer until well combined and creamy.
Step 3: Add Wet Ingredients
- Add vanilla extract and egg to the mixture.
- Beat for about 1 minute until fully combined and smooth.
Step 4: Incorporate Dry Ingredients
- Sift in the flour, baking soda, cocoa powder, and salt (if using).
- Mix briefly until a chocolate dough forms.

- If the dough feels a little dry, add the milk and stir in the chocolate chunks.
- Place the dough in the fridge to chill for at least 30 minutes.
