Chinese Chicken Noodles – Quick, Spicy & Full of Flavor!
This easy stir-fry noodle dish is packed with juicy chicken, crisp vegetables, and a savory sauce. Perfect for a quick dinner or meal prep!
Ingredients (Serves 2–3):
For the Noodles:
• 250 g Chinese egg noodles or mie noodles
• 300 g chicken breast, cut into thin strips
• 1 carrot, julienned
• 1 bell pepper, thinly sliced
• 100 g pak choi or napa cabbage (optional), shredded
• 2 garlic cloves, minced
• 1 small onion, thinly sliced
• 1 tsp ginger, grated or finely chopped
• ½ tsp chili flakes (optional for heat)
• 2 tbsp oil (sesame oil or neutral cooking oil)
For the Sauce:
• 3 tbsp soy sauce (light or dark)
• 1 tbsp honey or brown sugar
• 1 tsp rice vinegar or lemon juice
• 1 tsp cornstarch + 2 tbsp water (to thicken the sauce)
• 1 tsp sesame oil (for extra aroma, optional)
Instructions:
Cook the noodles
• Prepare the noodles according to package instructions. Drain and set aside.
Sauté the chicken
• Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
• Season the chicken with salt and pepper, then stir-fry until golden brown. Remove from the pan.
Stir-fry the vegetables
• In the same pan, add another 1 tbsp oil.
• Add onion, garlic, ginger, and carrot, stir-fry for 1–2 minutes.
• Add bell pepper and pak choi, and cook for another 2–3 minutes (vegetables should stay slightly crunchy).
Make the sauce
• In a small bowl, mix soy sauce, honey, rice vinegar, and cornstarch mixture.
• Pour into the pan, stirring well to coat the vegetables.
Combine everything
• Add the noodles and cooked chicken, tossing everything together.
• Let simmer for 1–2 minutes until the sauce thickens and coats the noodles.
Serve & enjoy!
• Garnish with spring onions, sesame seeds, or crushed peanuts for extra crunch.
Tips & Variations:
Want it spicier? Add sriracha, chili oil, or extra chili flakes.
More umami? Stir in a splash of Hoisin sauce or oyster sauce.
Low-carb version? Replace noodles with zucchini noodles or cauliflower rice.
