This easy stir-fry noodle dish is packed with juicy chicken, crisp vegetables, and a savory sauce. Perfect for a quick dinner or meal prep!

🛒 Ingredients (Serves 2–3):

For the Noodles:
• 🍜 250 g Chinese egg noodles or mie noodles
• 🍗 300 g chicken breast, cut into thin strips
• 🥕 1 carrot, julienned
• 🫑 1 bell pepper, thinly sliced
• 🥬 100 g pak choi or napa cabbage (optional), shredded
• 🧄 2 garlic cloves, minced
• 🧅 1 small onion, thinly sliced
• 🌿 1 tsp ginger, grated or finely chopped
• 🌶️ ½ tsp chili flakes (optional for heat)
• 🛢️ 2 tbsp oil (sesame oil or neutral cooking oil)

For the Sauce:
• 🥢 3 tbsp soy sauce (light or dark)
• 🍯 1 tbsp honey or brown sugar
• 🥄 1 tsp rice vinegar or lemon juice
• 🌿 1 tsp cornstarch + 2 tbsp water (to thicken the sauce)
• 🥜 1 tsp sesame oil (for extra aroma, optional)

👩‍🍳 Instructions:

1️⃣ Cook the noodles
• Prepare the noodles according to package instructions. Drain and set aside.

2️⃣ Sauté the chicken
• Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
• Season the chicken with salt and pepper, then stir-fry until golden brown. Remove from the pan.

3️⃣ Stir-fry the vegetables
• In the same pan, add another 1 tbsp oil.
• Add onion, garlic, ginger, and carrot, stir-fry for 1–2 minutes.
• Add bell pepper and pak choi, and cook for another 2–3 minutes (vegetables should stay slightly crunchy).

4️⃣ Make the sauce
• In a small bowl, mix soy sauce, honey, rice vinegar, and cornstarch mixture.
• Pour into the pan, stirring well to coat the vegetables.

5️⃣ Combine everything

• Let simmer for 1–2 minutes until the sauce thickens and coats the noodles.

6️⃣ Serve & enjoy!
• Garnish with spring onions, sesame seeds, or crushed peanuts for extra crunch.
