Ingredients

  • 4 cups diced or shredded rotisserie chicken
  • 3 cups diced ham

Cheese Sauce

  • 2 – 2 ½ cups milk
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ⅛ – ¼ teaspoon ground cayenne pepper
  • 2 cups shredded Swiss cheese or Gruyere cheese
  • Salt and pepper, to taste
  • 2 pinches nutmeg (optional but recommended)

Cracker Topping

  • ⅓ cup butter, melted
  • 1 ¼ sleeves Ritz crackers, crushed
  • ¼ cup Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Spray a 9×13 inch casserole dish (or similar size) with nonstick baking spray.
  2. Combine the diced chicken and diced ham in the prepared casserole dish.
  3. In a medium bowl, combine the melted butter, crushed Ritz crackers, and Parmesan cheese. Set aside.
  4. In a large skillet over medium heat, melt the butter. Sprinkle in the flour and whisk to combine. Cook for about 2 minutes while whisking.
  5. Slowly whisk in the milk and continue cooking until thickened.
  6. Whisk in the Dijon mustard, smoked paprika, garlic powder, and cayenne pepper.
  7. Reduce the heat to low and stir in the shredded Swiss cheese until melted. Season with salt, pepper, and nutmeg to taste.
  8. Pour the cheese sauce over the chicken and ham in the casserole dish. Sprinkle the cracker topping evenly over the top.
