Cheesy Queso Fundido with Green Chiles Recipe

This Queso Fundido is the ultimate melty cheese dip, featuring a blend of Monterey Jack and Oaxaca cheese with roasted green chiles for a flavorful kick. It’s perfect for dipping soft tortillas or chips and can be customized with optional toppings like bacon, tomatoes, or cilantro.

Ingredients:

1/2 pound Monterey Jack cheese, shredded
5 ounces Oaxaca cheese (or more Monterey Jack), shredded

8 ounces diced green chiles (2 cans or 4 large fresh peppers)
1 lime
Salt, to taste

Tomatoes for garnish (optional)
Cilantro for garnish (optional)
Bacon or sausage (optional)

Directions:

1. Preheat the Oven

Preheat your oven to 350°F (175°C).

2. Spread the Chiles

In a small baking dish, spread the diced Hatch green chiles evenly across the bottom.

3. Add the Cheese

In a bowl, mix the shredded Monterey Jack and Oaxaca cheese together. Then, sprinkle the cheese mixture evenly over the top of the green chiles in the dish.

4. Bake

Bake the fundido in the preheated oven for 10-15 minutes, or until the cheese is completely melted and just beginning to bubble. You want it gooey but not browned.

5. Finish with Lime and Salt

Once the cheese is melted, remove the dish from the oven. Squeeze 1/4 of a lime over the top and sprinkle with a pinch of salt to enhance the flavors.

6. Garnish and Serve

Garnish with diced tomatoes, cilantro, or cooked bacon/sausage if desired. Serve immediately with warm tortillas or tortilla chips for dipping.

Notes:

Oaxaca cheese is often found in the refrigerated section near other Mexican or Latin American cheeses. If you can’t find Oaxaca, you can substitute with more Monterey Jack, or even mozzarella or pepperjack for a bit of heat.
Roasted Hatch chiles are ideal for this recipe. You can use canned diced chiles or roast your own fresh peppers. For a milder option, try Anaheim peppers.
For a heartier dish, top with crumbled bacon or cooked sausage before serving.
