Beef and Onion Stir-Fry

Ingredients:
- 500 g tender beef (sirloin, flank, or ribeye), thinly sliced
- 2 medium yellow or white onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons low-sodium soy sauce (divided)
- 1 tablespoon cornstarch
- 2 tablespoons sesame oil
- Assorted vegetables (optional): bell peppers, broccoli, snow peas
- Steamed rice or noodles, for serving
Instructions:
- Marinate the Beef:
- In a bowl, mix 2 tablespoons of soy sauce, garlic, ginger, and cornstarch.
- Add the sliced beef, toss to coat, and let it marinate for 30 minutes.
- Sauté the Onions:
- Heat sesame oil in a large skillet or wok over medium heat.
- Add the sliced onions and sauté until softened, about 3-4 minutes.
- Push the onions to one side of the skillet.
- Stir-Fry the Beef:
- In the same skillet, add the marinated beef and stir-fry over medium-high heat until browned and cooked through, about 4-5 minutes.
- Add Vegetables (Optional):
- If using vegetables, add them to the skillet and stir-fry until crisp-tender, about 2-3 minutes.
- Finish the Sauce:
- Mix the remaining 1 tablespoon of soy sauce with 2 tablespoons of water.
- Pour the mixture into the skillet and stir for 1-2 minutes until the sauce thickens slightly.
- Serve:
- Serve the stir-fry over steamed rice or noodles.
- Garnish with sliced green onions or sesame seeds for added flavor.
