1 cup carrot, , julienned (can purchase matchstick carrots in produce part)
1/4 teaspoon nutmeg, (elective however brings out the flavour)
8 ounces grated sharp cheddar cheese, (2 cups)
salt and pepper
Soften the 1/4 cup butter and sautee the onions in it till comfortable. Sprinkle the flour over the combination. Prepare dinner and stir over medium warmth for 1-2 minutes.
Whisk within the half & half and hen inventory.
Add the broccoli and carrots. Prepare dinner over low warmth for 20-25 minutes or till the broccoli and carrots are tender.
Add salt and pepper. You’ll be able to go away the soup chunky or mix about 1 cup of the soup and stir it in for a smoother soup (that’s what I do). Return to low warmth and add the cheese. In case your warmth is just too excessive your soup can get grainy. Stir within the nutmeg if desired.
